Hi all,
Last year whilst on holiday I had a dish simply called "Chinese Salad". It contained iceberg lettuce, strips of ham, strips of carrots and strips of clear plastic looking stuff. The dressing on this salad was absolutely gorgeous. The chinese family kindly gave me some in a bottle which I took home. They said it would keep for a long time in the fridge and it did. I would love to recreate this salad dressing but I don't know where to start, maybe someone out there knows what it could be. It was very watery and like a milky white colour, it was sweet with a sour tang. It seperated whilst in the bottle and had to be shaken before putting on the salad. I hope someone can help me.

I don't know the "Chinese Salad". But my friend do. I will ask her.

Reminds me to make it again.
The transparent white shreds are Agar Agar
The Dressing that I make is a reduced Chicken Stock, Soy, Sesame seed oil, rice vinegar, then salt, sugar and pepper. finely julienned spring onions, ginger and coriander brings about a fresh flavour.
If you wish, to add some chicken that has be poached and cooled instead of ham, that's another option.
time to raise the chopsticks again.

What is Chinese Salad?
Is it something refer to cold dish?
