I've never heard of Cho Fun before.

Paul,

I think you are asking for ho fun, which is in Cantonese. In the US, ho fun is called Cho fun or Chow fun in restaurants and takeouts.

You can buy the broad dried flat rice noodles quite cheaply in Chinese/Asian grocery stores or fresh, usually kept in the fridge.

Reconstitute the noodles if dried as per the instructions and let them dry, but not dry out and then you can stir fry these with your choice of finely chopped meats and veggies.

You can probably find recipes online.

If this is the Cantonese 'Ho fun', then you should be able to get fresh ones in most Chinese supermarkets, situated in major cities. The Vietnamese used this in their 'pho'
