Can chinese cookery cope with coooking squirrels?

According to the River Cottage Autumn cookery programme on Ch4 I'm watching now, the grey squirrel is a big problem in UK woodlands.

These invaders out compete with the red squirrel in breeding, and they destroy the bark of growing trees causing them to die.

There are tens of thousands of them in a wood, and the wood keeper has to cull them to prevent them damaging the trees.

Therefore, they are urging the public to eat squirrels. They can be got from game/forrestry keepers and restaurants which serve game.

I eaten squirrel before, not very nice, bit chewy. Also need much spices to disguise "earthy" taste.

Not recommend. Duck or pigeon much better.

An innovative chef might be able to find the right ingredients to do something about the earthy taste.

Everybody love the red squirrels (Chinese?) but hate the Grey Squirrel (America?). So why not we genetically modify the grey so they are red then everybody be happy?

Beauty is in the eye of the beholder.
Once there are too many red squirrels, they'll be wondering if they have made the wrong choice, for red doesn't really match the colour of the forests.

Why don't people scream colour discrimination? Especially the animal rights. Surprised

No good. The vegetarians would certainly condemn it as GREEN wash.

Paul Parker loves grey squirrels. Especially when they've been slow-cooked for eight hours with thyme, garlic and tomatoes.
Certainly my braised grey squirrel on a cherry tomato risotto - £12.95 at the Manor House Inn, 15 miles outside Newcastle, near Hadrian's Wall - falls effortlessly off the bone and leaves a rich, gamey taste in the mouth, not unlike rabbit or pheasant.
Squirrel goes beautifully with a heavy Sicilian Merlot, by the way. And no, it doesn't taste of nuts.
