A can of well known pork luncheon meat and ham, which sustained a great number of people during the world wars.

What a sad lot of people who are so spoilt that they do not know a good 'SPAM' from the 'SPAM of their time'.

A tin of spam is a good stand-by at times when you do not have to rush to your local takeaway for the MSG loaded meal.

Thanks Edwina & Kang Daye 'Ni Hao'

As this little tin of 'Spam' came to me from people who had made 'waves' in their life. So these little 'siao ren' are water off a ducks' back. These persons have left their mark whereever they are in the world, (covering Australia, UK and Far East) so their little 'Spam' they send me are always worth partaking.

Unfortunately, due to my busy lifestyle, I have yet to find time to learn the skill to transfer their little 'titbits' to Dimsum.

In the spirit of this site, we partake our dimsum in a social environment, a open environment with equal rights. We might not agree with our fellow diners but they have the same right to partake too.

So whether they are fruity, undead or scraps of pork fat, there is a place for all taste.

A Recipe for 'Spicy Porkscratching Chutney'

- A slab of pork fat (1 kilo)
- Tamarind (4 oz)
- Onions or Shallots (2 standard size or 10 shallots)
- Fresh Chillies ( as hot as you like)
- Salt and Sugar to taste


Method

Cube pork fat into half in cubes
Put into pan
Reduce pork fat into scratchings
Separate Fat from Oil
(Cool down oil and use as lard)
Put the scratchings aside

Skin the onions or shallots and sliced thinly
Soak tamarind in tepid water ( 2 cups)
Sliced chillies thinly.

Heat up a pan
Use a spoonful of the pork lard, melt in pan and heat up.
Put sliced onions or shallots into pan, soften
Put in all pork scratchings
Put in tamarind juice ( without the pulp)
Put in the sliced chillies
Put in salt and sugar to taste
Reduce until no liquid remains.

This chutney is great with rice. Not necessary healthy but very tasty.

It is fruity and made good use of porkscratchings and even zombies will be waken up. Enjoy

I have been hibernating due to a bad bout of a virus named 'Zombie' sending out a lot of 'Spam' in my name.

Ah, that is part and parcel of reconciling the balance sheet of life.

Apologise, ZHM, the virus are real; but my 'wicked' sense of humour could not resist this little 'pun'.
